Schar Ravioli with a Creamy Red Pepper Sauce

When Schar approached me to come up with some recipes using their new fresh pasta, I jumped at the chance!  I hadn’t tasted fresh pasta in such a long time and was desperate to try their Ravioli con ricotta e spinaci as I don’t think I’ve had that since I was little!

I tried to think of a sauce to compliment the creamy ricotta and spinach filling that wasn’t too overpowering so you can still taste those flavours inside the ravioli, and this creamy red pepper creation seemed like the perfect fit.

This is comfort food at it’s finest, and the Schar fresh pasta was absolutely delicious and 100% recommended for this dish! The sauce doesn’t take long to create, and the pasta takes minutes; an ideal midweek dish.


Schar Ravioli with a Creamy Red Pepper Sauce 

Prep Time: 10 minutes              Cook Time:  20 minutes              Servings: 2


  • 1 packet of Schar fresh pasta Ravioli con ricotta e spinaci
  • 2 red peppers
  • 1 onion
  • 1 tablespoon oil
  • 1-2 cloves of garlic
  • small bunch of fresh basil leaves
  • 150ml double cream
  • 60ml vegetable stock
  • 1/2 teaspoon paprika
  • 1/2 teaspoon chilli flakes
  • salt and pepper
  • fresh parmesan shavings to serve



  1. Preheat a medium sized cooking pan over a medium heat with the oil.  Also have a pan of water on a simmering boil ready for the Schar ravioli later
  2. Slice the peppers and onions into strips and add to the oil in the pan and cook for a few minutes until they start to soften


  3. Crush the garlic, add to the pan and saute for a few minutes
  4. Add in to the pan the vegetable stock, chopped basil leaves, chilli flakes, paprika and salt and cook down for about 5 more minutes until the vegetables are soft and the sauce has reduced slightly
  5. Transfer the contents into a food processor and blend until smooth
  6. Return the sauce to the pan, add the cream and taste for seasoning.  Lower the heat of the pan so it is simmering


  7. Cook the Schar ravioli according to the package instructions, which should only take about 3 minutes, then drain
  8. Add the Schar ravioli to the sauce, stir and heat through


  9. Serve right away with some shaved Parmesan cheese on top, with an optional side of salad
  10. Enjoy!
