Schar Tagliatelle with Avocado & Spinach Pesto

Anything smothered in a green sauce has got to be good for you, right?! RIGHT! This (loosely-termed!) pesto is made using ripe avocado and spinach, blitzed to make a sumptuous sauce that wraps around the new Schar fresh pasta tagliatelle like a dream!

This rich sauce is accompanied by slow roasted tomatoes and crisp green beans, giving some sharpness and bite to the dish… and the best thing about this creamy sauce is that it is completely vegan!

I urge you to give this recipe a try.  It’s the perfect dinner for all seasons, and is utterly delicious.  Food on the table in a matter of moments; what’s not to like!?


Schar Tagliatelle with Avocado and Spinach Pesto

Prep Time:  10 minutes                Cook Time: 1 hour 15 mins                   Servings: 2
(or 15 mins if using pre-prepared tomatoes)



  • 1 packet of Schar Tagliatelle
  • 3 large tomatoes
  • 100 g french beans
  • 2 ripe avocados
  • handful fresh spinach (also works well with watercress)
  • small bunch of fresh basil leaves
  • 2 cloves garlic
  • juice of 1 lemon
  • 25 g pine nuts



  1. You can cut the cooking time down by an hour if you need a quick dish, and can buy ready-to-eat slow roasted or semi-dried tomatoes, or even sundried tomatoes, and cut out step below!
  2. Preheat the oven to 160°C. Quarter the tomatoes and place them skin-side down on a lightly oiled baking tray.  Drizzle with a little olive oil and season with salt and black pepper. Place in the oven for at least an hour and you’ll then start to see the edges crisp and turn brown/black
  3. Take the tomatoes out of the oven, turn them over and squash them down onto the tray so they release their juices.  Scatter the pine nuts onto the tray and place the tray back into the oven until needed later


  4. Top and tail the french beans, leaving them whole, and place into a simmering pan of water until al dente.  You will want some bite left with the beans as they are what gives a bit of crunch to the dish


  5. Meanwhile, in a food processor blitz together the avocado, spinach, basil, garlic and lemon juice.  Add a little water and blitz until the consistency is that of a thick sauce Season with salt and black pepper to your taste and set aside


  6. Cook the Schar Tagliatelle as per the packet instructions; this should take about 4-6 minutes


  7. Add the drained tagliatelle and beans together in the pan, pour in the sauce, and then add the tomatoes and pine nuts. Turn on the heat for a minute or so to heat the sauce through, then serve immediately
  8. Enjoy, with an optional side salad for more greeny goodness!
