Coconut and Lime Cupcakes

My absolute favourite flavour HAS to be coconut…with hazelnut in at a close second!  Coconut ANYTHING is an absolute winner for me, and so it often ends up in my recipes!

These went down well with my testers (my poor colleagues!) and so I hope they go down just as well with you and whoever you bake them for!


Coconut and Lime Cupcakes

Prep Time: 25 minutes     Cooking Time: 20 minutes     Servings: 12 – 16


For the Cupcakes:

  • 125g / 1/3 cup butter, softened
  • 200g / 1 cup caster sugar
  • 200g /1 cup gluten free self raising flour (I use Dove’s Farm)
  • 1/4 – 1/2 teaspoon xanthum gum
  • 2 large eggs
  • Zest 1 lime
  • 1 teaspoon baking powder
  • 125ml / 1/2 cup coconut milk
  • 50g / 1/4 cup dessicated coconut

For the Frosting:

  • 120g / 1/3 cupsoftened unsalted butter
  • 200g / 1 cup icing sugar, sieved
  • 2 tablespoons coconut milk
  • 1 tablespoon lime juice
  • Optional lime zest and toasted coconut to decorate

  1. Preheat an oven to 180 degrees and line a muffin tin with cupcake cases
  2. In a bowl cream together the butter and sugar until smooth, light and creamy
  3. Next, one at a time, at the eggs and whisk in to the mix. Lastly, stir in the lime zest
  4. Into that bowl sift in the flour, xanthum gum and baking powder
  5. Add into the bowl stir in the coconut milk and gently mix until all ingredients are combined.  If the batter is a little too thick (as often the case with gluten free flours and xanthum gum) mix in a little more coconut milk until it becomes a looser consistency

  6. Gently fold in the dessicated coconut, then spoon the mixture into the cupcake cases and bake in the oven for 15 – 20 minutes, checking the cake is cooked all the way through when a skewer comes out clean from the middle
  7. Leave the cupcakes to completely cool on a wire rack
  8. To make the frosting, cream the butter and gradually add the icing sugar until smooth.  Add in the coconut milk and lime juice until fully combined
  9. Once the cupcakes are completely cooled, pipe on the butter cream, and garnish with the optional coconut and lime zest.  EnjoyCoconut cake and icecream
