My dinners during the week have to be quick and healthy, but most importantly, tasty. This is a delicious dish, and you wouldn’t expect something so simple to taste so good! It’s originally from a Slimming World cookbook I think, but don’t let that put you off as it’s still really tasty! Low fat but high in protein turkey breast, topped with bacon, sage and lemon. It’s a winner for me!
Lemon and Sage Turkey Breast
Prep Time: 15 minutes Cook Time: 30 minutes Servings: 2
Ingredients
- 2 turkey breasts (placed in between two sheets of clingfilm and bashed with a rolling pin until thin)
- 2 sweet potatos or regular baked potatoes
- 2 unsmoked bacon rashers (fat removed)
- 2 sage leaves
- 2 slices of lemon
- 2 cocktail sticks
- 200ml of chicken stock
- Vegetables to serve
Method
- Put the potatoes in the oven to bake until crispy. If using sweet potatoes, this will only take 35-40 minutes, depending on size
- Once the turkey breasts have been thinned, place a bacon rasher on each breast, and top with a sage leaf and a slice of lemon. Secure all with a cocktail stick
- Spray some oil or put a little olive oil into a frying pan. Add the turkey breasts, bacon side facing up at first. Leave to cook for about 10 minutes
- Carefully flip the turkey breast onto the other side (bacon side now down) and cook again for approximately 10 minutes, until the bacon starts to crisp
- Once the turkey is cooked through, place onto a plate and cover in foil. Place into the oven or a warm place
- Add the stock into the empty frying pan and cook until it has reduced to half it’s quantity
- Place the turkey breast, potato and your choice of vegetables onto your plate, pour over the stock sauce, and enjoy!
